Green Chile Stew

INGREDIENTS:

3 Small Cans of Diced Green Chiles
1 Small Can Diced Jalapenos
1 Can Beans (Chile/Kidney/Pinto)
1 Can Diced Tomatoes
1 Small Can of Corn
1/4 Lb Meat (optional) (Pork/Chicken/Sausage/Shrimp)
1 Onion (optional)
3 Tbsp Cilantro (fresh)
3 Tbsp Garlic (fresh/jarred)
1 Lime
1 Avocado
Sour Cream (optional garnish)
Spices: Pepper, Salt, chili powder

DIRECTIONS:

Drain the juice from cans of corn, beans and jalapenos. In a large pot, combine all canned ingredients and spices and turn on medium heat. Dice onion and cilantro and add to pot.

Cover pot and simmer on low-med for 10 minutes, stirring occasionally.

Dice garlic and add, along with optional meat, to stew and simmer for additional 5 minutes.

Add juice from entire lime and stir well.

Serve in bowls and top with sliced avocado and dollop of sour cream.
